Mom's Best Chocolate Bundt Cake with Fluffy White Frosting

Chocolate is my weakness, and we all need a good chocolate cake recipe in our archives. My kids love it, there for they named it mom's chocolate cake. It's a mixture of all my favorite things..... coffee, white fluffy icing, moist cake....it doesn't get better. The best thing about this cake is how easy it is to whip together. Read on and you'll see. 1 3/4 cups all purpose flour 2 cups granulated white sugar 3/4 cup unsweetened cocoa powder 1 1/2 tsp baking soda 3/4 teaspoon salt 2 large eggs 1 cup buttermilk 1/2 cup butter melted 1 tbsp vanilla extract 1 cup hot coffee In a large mixing bowl mix all of the ingredients in order. The batter will be soupy. Grease a bundt pan, bake at 350 degrees for 40 minutes or until a toothpick comes out clean. For the Frosting 1 cup sugar ⅓ cup water ¼ teaspoon cream of tartar 2 egg whites 1 teaspoon vanilla extract Instructions In a small saucepan over medium heat, stir together sugar, water and cream of tartar. Cook until sugar is dissolved and bubbling. In mixing bowl, whip egg whites and vanilla to soft peaks. Add sugar mixture while whipping until stiff peaks form. Typically takes about 10 minutes. Frost the cake once it is cooled.
