Chocolate Chip Pumpkin Muffuns

Another irresistible pumpkin recipe. Why not add a little fun to this muffin by adding some chocolate chips. This makes a big batch and rightfully so. These muffins don't last long. The combination of pumpkin and chocolate is a pair you didn't even realize belonged together. 1 - 15 oz. can pumpkin puree 4 large eggs 1 cup vegetable oil 1 tablespoon vanilla extract 2/3 cup whole milk 3 cup granulated sugar 3 1/2 cups all-purpose flour 2 teaspoons baking soda 1 1/2 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1/2 teaspoon ground cloves 1/4 teaspoon ground ginger 2 cups chocolate chips Preheat oven to 350 degrees. Line a muffin pan with liners and set aside. In a large bowl, combine pumpkin, eggs, vegetable oil, vanilla, milk, and sugar. In a separate bowl, whisk together flour, baking soda, salt, and spices. Add the dry ingredients to the wet ingredients and mix until combined. Fold in chocolate chips Add about 1/4 cup of batter to each liner in the muffins pan and bake for 17 to 20 minutes or until toothpick comes clean from the center. Makes about 48 cupcakes.
