The Best Pumpkin Muffin

These little muffins are the best pumpkin version I have ever had, and one of the best muffin recipes ever! They are super simple, my daughter makes them. But I can promise one batch will not be enough, this is a double even triple batch recipe. They are that good. Let me me tell you how.

1 15oz can pumpkin puree 

2 eggs

1/3 cup vegetable oil

1 1/2 cups flour

1 tsp baking powder

1/2 tsp baking soda 

1 tsp pumpkin pie spice 

1/2 tsp salt 

1 1/4 cups sugar

In a medium mixing bowl combine all if the dry ingredients. Set aside.

In another medium mixing bowl combine pumpkin, eggs, and oil. Beat until smooth.

Slowing add in dry ingredients while mixing. Beat until everything is combined and smooth.

Line a muffin tin and spoon in mixture. One batch makes 12 muffins. I like to fill up the tins for bigger muffins. Bake at 350 degrees for 20 to 25 minutes or when a toothpick comes out clean.
