Baked Chicken Cattitorie

This is one of our favorite dinners, my kids both love this dish. And when something like that happens you know I'm sticking to this meal! It's so good, comforting, all the flavors together make for a truly delicious dinner and everybody is happy. That makes me happy! It's really pretty easy to put together, and not fussy at all on which ingredients you use. I make this with pretty much whatever chicken I have on hand. This time I had drum sticks, you can use thighs even chicken breast. You can even switch up the vegetables too. Let me tell you how.

1 package of chicken drumsticks or thighs
1 jar marinara sauce
1 15oz can peeled whole tomatoes
1 chopped green pepper
1 chopped onion
1 package button mushrooms washed and halved.
3 cloves crushed garlic
1/2 cup chicken stock
1 cup fresh shredded parmesan
1 box cooked ziti pasta
Olive oil
Italian seasoning
Salt and pepper
In a large pan heat with a tablespoon of olive oil. Season the chicken with salt and pepper and Italian seasoning. When the pan is hot add the chicken. Brown for about 3 to 4 minutes, flip over and brown another 3 to 4 minutes. Take the chicken out and set aside.
In the same pot add onion, green pepper, mushrooms, and garlic. Sautee for a few mintues, add the chicken stock and continue cooking for another 3 to 4 minutes. Turn the heat off.

Start assembling. In a casserole pan pour half of the marinara sauce on the bottom. Then half of the whole tomatoes (which I half and quarter them) lay the chicken on top. Next pour the vegetables over the top. Then the rest of the marinara sauce and tomatoes.
I also add a little Italian seasoning on the top.

Bake at 375 degrees for 35 to 45 minutes. The last 10 mintues of baking sprinkle on the shredded parmesan. When it is finished baking I serve the chicken, vegetables, and sauces over pasta.
