My go to rainy day soup. Vegetable Beef Soup is packed with all the comforts from your cupboard. I love smelling this in the slow cooker all day. The hardest part is just waiting for the soup to be done! Believe me it's worth it.
1 lb beef stew meat
1 medium diced onion
2 stalks celery
3 to 4 diced potatoes
2 cloves chopped garlic
32 oz beef stock
32 oz can diced tomatoes
1 bag of mixed frozen vegetables
1 packet Lipton onion soup
1/2 tsp basil
1/2 tsp oregano
Salt and pepper
Brown the stew meat seasoned with salt and pepper.
To the slow cooker add diced onion, celery, potatoes and garlic. Add the browned meat. Next mix in beef stock, diced tomatoes, mixed vegetables, Lipton onion soup, basil, oregano, and salt and pepper to taste.
Cook on low for 8 to 10 hours. Once the potatoes are tender the soup is done.
