Simple Cherry Pie

There's nothing more beautiful the a homemade cherry pie! The love of cherries definitely come from my side of the family. Cherry pie is my Dad's favorite. So naturally I better ha e the best cherry pie recipe around. Well I hate to brag but this one is certainly up there! This recipe is simple I promise!
4 cups pitted cherries
4 tbs cornstarch
1 1/2 cups sugar
1/8 tsp salt
1/4 tsp almond extract
Store bought pie crust (My favorite brand is pilsbury)
In a medium saucepan add all the ingredients, cherries, cornstarch, sugar, salt, and almond extract. On medium heat bring to a boil stirring constantly. The mixture will start to thicken. Once it is noticeably thick take it off the heat and let cool about 15 mintues.

With a store bought crust roll out the bottom crust and put it in the pie pan. Pinch the edges to add a little decoration. Pour in the cooled cherry mixture. Roll out the top crust. Have a little fun with the top crust, you can do a lattice pattern (like I did for this one), cut out fun shapes to go on top, or stay traditional and put the whole crust over and don't forget a few slices to let the steam out. Sprinkle the top with some sugar to add a nice crust.

Bake at 400 degrees for about 40 to 45 minutes or until the crust is golden brown. While your baking set the pie pan on a cookie sheet to prevent any dripping in your stove. Let cool completely and serve.
