Old Fashion Carrot Cake with a Cream Cheese Frosting

Here is a great carrot cake recipe that has been passed down in my family for generations. This is just one of those recipes you don't change a thing. It's the best carrot cake with the best cream cheese frosting. It's very moist and tasty, a classic dish for sure.
For the cake
4 eggs
2 cups sugar
1 1/2 cups vegetable oil
2 tsp vanilla extract
2 cups flour
2 tsp cinnamon
1 tsp baking soda
1 tsp salt
3 cups grated carrots

In a mixer beat the eggs. Next add in sugar, oil, and vanilla extract. Beat until it's smooth, about 3 minutes.
Sift together all the dry ingredients flour, cinnamon, soda, and salt.
Add flour mixture to the egg mixture beating until it's combined.
Mix in the carrots.
In a greased 9x13 pan add the batter and bake at 350 degrees 30 to 40 minutes. Until a toothpick comes out clean.
Let cool completely.
For the cream cheese frosting
12 tbs butter
8 oz cream cheese
2 tsp vanilla extract
2 cups powdered sugar

Beat together butter, cream cheese, and vanilla until smooth. Add the powdered sugar.
Frost the cake once it is cooled.
