The Ultimate Slow Cooker Chicken Chilli

Chilli is great in any form! This ultimate slow cooker chicken chilli is packed with all kinds of fresh vegetables and flavors. 

2lbs boneless skinless chicken breast

1 large onion

1 large red bell pepper

4 stalks of celery 

4 gloves of garlic

1 15 oz can chilli beans

2 tbs chilli powder 

1 tsp salt

1 1/2 tbs cumin

2 cups chicken stock

1 15oz can tomato sauce

1 15oz can diced tomatoes 

Dice up onion, red pepper, celery, and garlic. Add 2 tbs of olive oil to a pan add vegetables and cook for about 5 minutes.

Next add the cooked vegetables to the slow cooker, pour in the chilli beans, next layer in the chicken and add chilli powder, cumin, and salt over the top.

Finally pour over the chicken stock, tomato sauce, and diced tomatoes.

Cook on low 6 to 8 hours or high 3 to 4 hours.

When it's cooked through take out the chicken and shred with a fork, put the chicken back in the chilli and serve.
