Slow Cooker Pot Roast

A slow cooker pot roast is a great dinner any night. It's so tasty, it needs nothing fancy. We honestly eat this meal as is. I don't add anything. I've yet to have any leftovers. I love the meat falling off the bone and the potatoes and onions are so tender. All the flavors work and make this a great pot roast.
2 to 3lb round roast
1 medium onion
6 large red potatoes
1/4 cup stone ground mustard
1 tsp garlic salt
1/2 tsp pepper
2 sprigs of fresh rosemary
2 sprigs of fresh thyme
1 cup beef stock
Slice the onions and quarter the potatoes skin and all. Place in the crockpot.
Mix together mustard, pepper, and garlic salt and rub over the roast. Place the roast in the crockpot. Pour in beef stock and the sprigs of rosemary and thyme.
Cook on low for 6 to 8 hours until the meat is tender. Serve right away.
