Easy Skillet Peach Cobbler

I've got the perfect peach cobbler dessert that's quick and easy you'll wonder why you don't make this more often. This dish is my husband's favorite, and his favorite way to eat peach cobbler is warm over a bowl of vanilla ice cream. Yum! My mouth is already watering. You better hurry and grab this recipe you won't want to pass this dessert up.
3 15oz cans of sliced peaches
1 stick of butter softened
1 cup sugar
1 cup flour
1 1/4 tsp baking powder
1/8 tsp salt
1 egg
1 tsp vanilla extract
Using a cast iron skillet (or any baking pan) grease and pour in the peaches. Sprinkle with 1/4 cup of sugar over the top.

Cream together butter and sugar. Once it's fluffy stir in flour, baking powder, salt, egg, and vanilla.

Spoon this mixture over the top of the peaches. Sprinkle with a little sugar and bake at 350 degrees for 40 to 45 minutes until golden brown.
Let cool, serve with vanilla ice cream if desired.
