Quick Blackberry Jam

This is a great jam recipe you can whip up fast. No canning involved. Sometimes I don't want to go through all the hassle of making a huge batch, boiling lids, and canning all that jam. This is my quick jam. The I just want some fresh jam. Blackberry is definitely at the top of that list. You can have perfectly homemade jam in less then 30 minutes!
4 cups chopped blackberries
2 cups sugar
Zest and juice of half a lemon
Combine all the ingredients in a bowl and mix so that everything is combined. Set in the refrigerator for an 1 hour to let all the flavors come together.

Pour the ingredients in a large pot. Over medium heat bring to a bowl. It's important to keep mixing so that the jam doesn't burn. Once it's boiling continue stirring for 10 minutes. The jam will start to thicken. Transfer the jam into a jar. You can get about 2 jam jars out of this recipe. Cover and refrigerate.
