Creamy Tomato Tortellini Soup

This creamy, delicious, one pot tortellini soup is a keeper. The combination of tomato, cheese, and fresh herbs are what ties this soup all together. One of my favorites! It's so easy to put together in a little over 30 minutes you will have one delicious soup at your table.
1 medium diced onion 4 cloves of minced garlic 1 sprig of rosemary chopped 1 tbs olive oil 1/2 tsp dried oregano 1/2 tsp salt 1/4 tsp pepper 5 large basil leaves chopped 1 28oz can diced tomatoes 1 15oz can tomatoes sauce 4 cups chicken stock 1/2 cup heavy cream 1 12oz package of three cheese tortellini 1/2 cup freshly shredded parmesan cheese Fresh basil and shredded parmesan cheese for garnish

In a large soup pot combine diced onions, minced garlic, rosemary, and olive oil. Sautée until onions are translucent. Add basil, oregano, salt, pepper, diced tomatoes, tomato sauce, chicken stock, and heavy cream to the pot. Bring to a boil and simmer 20 mintues. Add the uncooked tortellini, gently boil for an additional 12 mintues. Next add the parmesan cheese and stiring through until it's melted and combined. Serve soup and garnish with fresh basil and shredded parmesan.
