Lemon Thyme Cookies

I am in love with these Devine little cookies. Sometimes thinking outside of the box you find something so great. These aren't your average chocolate chip cookie! The combination of the lemon and fresh herbs mixed with some cardamom....umm hmm.
The best thing, my kids love them too! Another bonus they are super easy to prepare! So take a walk on the wild side and give each these lemon thyme cookies a try.

1/2 cup softened butter
1/4 cup sugar
1 tbs chopped fresh thyme
1 tbs fresh lemon juice
2 tsp lemon zest
1/4 tsp ground cardamom
1 1/4 cups flour

In a mixing bowl cream together butter and sugar. Next mix in the thyme, lemon juice, lemon zest, and cardamom. Once that is combined beat in the flour. You will have to knead dough together and form a ball. Roll out on a floured surface to about 1/4 inch thick. Cut out cookies, sprinkle the tops with a little course sugar or granulated sugar. Bake at 350 degrees for 10 to 12 mintues.
