Quick Rhubarb Mini Loafs

Another great way to use up that rhubarb, which seems to be our always giving plant. These adorable mini loafs are perfectly bite sized and just plain cute. Of course you can use regular bread loaf pans too, but why not get a little creative once in a while. Don't forget about the taste of this bread, it's delicious! Check it out and give it a try!

1 1/2 cups chopped rhubarb 

2 cups flour

1/2 tsp baking powder 

1/2 tsp baking soda

1/2 tsp salt 

1 stick softened butter 

1 cup sugar

2 eggs

1 tsp vanilla extract 

1/4 cup milk

1/2 cup sour cream 

In a small bowl add flour, baking soda, baking powder and salt. Set aside.

In a mixer cream the butter and sugar until fluffy. Add the egg one at a time, mixing inbetween. Then mix in the vanilla. 

Add the milk to the flour mixture. 

Add the flour/milk mixture alternating the sour cream to the sugar mixture. Once it's all combined fold in the rhubarb.

Preheat oven to 350 degrees. You can use mini loaf pans or regular bread loaf pans. Grease the pan. Bake for 40 to 45 minutes or until a toothpick comes out clean.
