Cilantro Lime Rice

This dish is a perfect side. Add a little bit of fun to plain white rice. I like to make this when we are having tacos, fajitas, or enchiladas. It's so easy to prepare. On those quick nights add this to your meal. It's no fuss, put it on the stove and it will do the work for you.
2 cups chicken stock
1 cup of white rice
1/2 tsp salt
1/4 tsp cumin
1 tsp lime zest
1 tbs lime juice
2 tbs chopped fresh cilantro
In a medium saucepan combine chicken stock, rice, salt, and cumin. Bring to a boil, reduce heat cover and simmer for 15 to 20 mintues.
Once the rice is done cooking add the lime zest, lime juice, and chopped cilantro. Fluff with a fork and serve warm.
