Double Chocolate Mousse Pie

This mouth watering double chocolate moose pie is a slice straight from heaven. It's made up of a chocolate wafer cookies crust and a perfectly made chocolate moose. It's fantastic. This is the pie my husband chooses for his birthday. Rather then cake we make this chocolate moose pie. It's a win win for sure.
For the crust:
50 chocolate wafer cookies crushed
5 tbs melted butter

Combine the melted butter and crushed cookie crumbs and press them into the pie dish.
For the moose:
5oz of semi sweet chocolate chips
1 cup heavy cream
3 eggs whites
Take a small saucepan pan fill with water about 2 inches. Bring to a simmer. With a glass bowl placed on top of the sauce pan, melt the chocolate chips and 1/4 cup of the heavy cream. Once the chocolate is melted set aside.
In a mixing bowl beat the egg whites until stiff peaks form about 3 minutes. Set aside.
In a clean mixing bowl beat 3/4 cups of heavy cream until still peaks have formed about 3 minutes.
Fold together slowly the whipped cream and melted chocolate. Next fold in the egg whites until everything is incorporated. Pour into the pie crust. Smooth out, I garnished mine with a little whipped cream and mini chocolate chips. Refrigerate for 2 hours before serving.
