Freezer Cookies

This make ahead cookie dough is my favorite way to make cookies. Make the dough and freeze it until you're ready. It's so fast, so convenient, and these cookies are so tasty. This simple dough recipe makes 2 different cookies. For my batch of dough here I made chocolate chip almond cookies and white chocolate cranberry cookies. Read on and I'll explain how to make these. 

For the dough:

2 1/2 cups flour 

1 tsp baking soda

1 tsp salt

1 1/4 cups brown sugar

1/4 cups sugar

2 sticks of softened butter 

2 eggs

1 tsp vanilla extract 

In a medium bowl sift flour, baking soda, and salt. In a mixing bowl cream together butter, brown sugar, and sugar. Once it's combined beat in one egg at a time then add the vanilla. Now add in the flour mixture slowly while mixing. 

Divide the dough in half. To one bowl add 1/4 cup of white chocolate chips and 1/4 cup dried chopped cranberries. Set aside. To the next bowl add 1/4 cup chocolate chips and 1/4 cup chopped almonds. Make sure each dough has all their mix in's incorporated. Now to feeeze. Spread out plastic wrap and in the middle add one of the doughs. Wrap together forming a log. Tuck in the ends. Repeat with the next dough. Slide them in a gallon size zip lock freezer bag and freeze.

To make these cookies pull them out of the freezer, set them out for about ten minutes. Using a knife cut the cookies from the log. Bake the cookies at 350 degrees for about 10 minutes or until done.
