Lemon Olive Oil Cake

Lemon Olive Oil cake, sounds fancy doesn't it. Well don't tell but it's really as simple as doctoring up a box cake mix. This is a fun cake to serve as you can dress it up any way you want, I used a bunch of blueberries and stuck them right in the middle. Raspberries would be great even a sprig a mint. The kicker is the olive oil, which makes the cake super moist and flavorful. Here's what you need.
1 box yellow cake mix
3 eggs
1 cup water
1/2 cup olive oil
Zest of 2 lemons

In a bowl combine all of the ingredients, mix well. In a round greased cake pan pour in the cake mixture. Bake at 350 degrees for 30 minutes or until a toothpick comes out clean.
For the glaze:
2 cups powdered sugar
Juice from two lemons

Mix the powdered sugar and lemon juice together. Once the cake is cooled flip it over onto a cake stand. Pour over the glaze. Spread it out and let it drizzle off the sides. Garnish with some fresh fruit and enjoy.
