Best Ever Strawberry Rhubarb Jam

It's that time of the year again, my rhubarb is getting big and ready to pick. I just love using my homegrown goodies to create wonderful recipes. A while back my family and I ate at a restaurant where we tasted the best strawberry rhubarb jam I have ever had. I went home thinking how am I going to re create this recipe so we can enjoy it all year round. Well after a few tries I nailed it. Still to this day our favorite jam!

4 cups chopped rhubarb 

4 cups chopped strawberries

2 cups sugar

Chop the rhubarb and strawberries into small chunks. Add them to a big bowl and mix in the sugar. Let it sit on the counter for 45 minutes. The juices will start to flow.

Put the mixture in a pan and cook over medium/high heat. Make sure to stir constantly or it will burn. Once it's boiling keep stirring for another 20 to 30 mintues. The mixture will get thick and the rhubarb and strawberries will break down nicely. Be patient and keep stirring once it's nice and thick can them in your hot jars and seal with lids. Let them cool and store. This makes a small batch, about 2 pints. You can easily double or triple this recipe. Enjoy!
