Homemade Chocolate Cupcakes with a Creamy Peanut Butter Frosting

A perfect homemade chocolate cupcake, with a creamy dreamy peanut butter frosting. No better pairing of ingredients are more perfect then chocolate and peanut butter. These were my perfect Mother's Day cupcakes. A huge hit with the whole family. They barley made it out of the oven. You know once in awhile we just need a good cupcake and seriously these are the best. They aren't so sweet for my non sweet loving husband, but these are my exception. Everyone loves these cute little cupcakes.
For the chocolate cupcake:
1 cup flour
1 cup sugar
1/2 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup milk
1/4 cup vegetable oil
1 tsp vanilla extract
1 large egg
1/2 cup cooled coffee

In a medium mixing bowl combine all the dry ingredients. In another mixing bowl combine the wet ingredients, once the wet ingredients are beat together add the dry and continue beating until combined. Line a cupcake pan and pour the mixture in. This makes 12 cupcakes. Bake at 350 degrees for 15 to 17 mintues. Cool on a wire rack.

For the frosting:
8oz cream cheese softened
4 tbs softened butter
1 cup peanut butter
2 tbs vanilla extract
1 cup powdered sugar
Beat together the cream cheese and butter until fluffy, add in the peanut butter and vanilla. Continue mixing. Last add the powdered sugar again mix until combined. Frost the cooled cupcakes and garnish with shaved chocolate pieces.
