Healthy Oatmeal Chocolate Chip Cookies

I love this version of a healthy chocolate chip cookie. It's very tasty and hits the spot. This is a big hit with my kids. I love that they adore these cookies. This makes a smaller batch about 20 cookies so they definitely don't last long. Be prepared for little fingers to be grabbing these right out of the oven, so be warned they are that yummy.
3/4 cups flour
3/4 cups old fashioned oats
3/4 tsp baking soda
1 tsp cinnamon
Pinch of salt
1 1/2 tsp vanilla extract
1 egg
4 tbs brown sugar
1/2 cup coconut oil
1/2 cup dark chocolate chips

Mix flour, oats, baking soda, cinnamon and salt together in a mixing bowl.
In another bowl combine vanilla, egg, and brown sugar. Melt the coconut oil just until smooth cool slightly, then mix it to the egg mixture.
Add the flour mixture to the wet mixture combine. Next fold in the chips. Cover and chill for at least 30 minutes.

Scoop cookies out with a cookie scoop and onto a cookie sheet, bake at 350 degrees for 7 to 9 minutes. Cool on a wire rack.
