Lemon Shortbread Cookies

Are your ready for the easiest and quickest cookie recipe ever! Well I hope so because I have to share these with you, I can't keep this one to myself. These scrumptious little lemon cookies pack a mouth full of taste but I'm telling you it took me under 45 minutes from start to finish to bake and frost these little babies up. OK I'll quit talking now so I can get you this recipe.

For the dough:

2 sticks softened butter

2 tbs fresh lemon juice

1 cup powdered sugar 

Pinch of salt

2 1/2 cups flour

In a mixing bowl mix together butter, powdered sugar, and salt.

Once that is combined scrap the sides and add the flour. Mix for a few minutes, the batter will get thicker with big clumps. 

With your hands form into a ball. Roll out with a rolling pin to about 1/2 inches thick. Cut out circles. Bake at 375 for 6 to 8 mintues, they should not be browned. Cool on a wire rack.

For the glaze:

1 cup powdered sugar

1 1/2 tbs lemon juice 

1/2 tbs milk

Whisk all the ingredients together in a small bowl. Spoon over the cookie and let harden. Garnish with some lemon zest.
