Blackberry Crumble Bars

Simple as can be, these glorious little bars are the perfect treat. Just add the layers and bake. Blackberries seem to be the forgotten fruit, but we forget how yummy and sweet they really are. These blackberry crumble bars won't let you forget about them anymore.

Crust and Topping


3 cups flour


3/4 cup sugar


1/2 tsp salt


3/4 cup softened  butter


3 eggs beaten


In a medium bowl add flour, sugar, and salt. Using cold butter add to the mixture in chunks. Mix with a fork or pastry mixer until it's crumbly. Next add in the eggs. Using a fork, mixture should be about pea size crumbles. Take half of the flour mixture and press it on the bottom of a greased 9x13 pan.

Filling


4 cups blackberries cut in half


1 tbs lemon juice 


1 tbs cornstarch 


3/4 cup sugar 

Combine all the filling ingredients mix together, spread over the crust layer. Next take the rest of the crumble mixture and sprinkle it on top of the blackberries. Bake in the oven at 375 for 25 to 30 minutes. Cool completely and I like to store mine covered in the refrigerator. I like them cold.
