Old Fashion Banana Cream Pie

A classic banana cream pie straight out of the recipe books of grandma. Now this is my favorite pie of all time. Always has been and always will be. Believe it or not this is a pretty easy recipe. I can whip this up in no time. The best part of this pie is serving it up nice and cold. You honestly can't go wrong with this recipe.
1 baked pie crust
For the filling:
3/4 cup sugar
1/2 cup cornstarch
1/8 tsp salt
2 egg yolks
2 cups milk
1/2 tsp vanilla extract
2 tbs butter

In a medium saucepan combine sugar, cornstarch, salt, egg yolks, and milk. Heat over medium heat whisking constantly until mixture is thickened, about 10 minutes. Turn off the heat and stir in butter and vanilla. Pour into baked pie crust.

Cover with slices of banana.
For the topping:
2 egg whites
4 tbs sugar
3 tbs water
1/8 tsp cream of tarter
Combine all the ingredients, beat until you reach stiff peaks. Be patient it will happen. Cover the pie with the topping and refrigerate until completely cooled. Serve cold.
