Simple Homemade Red Velvet Cupcakes

These beauties are simply the best red velvet cupcakes I have ever had. They are homemade and simple all you need is a bowl and a whisk to get the job done. For years when I would make red velvet I would always buy the box cake because any homemade recipes I have tried they never taste the same, they would come out dry, the flavor wasn't there. Not until this recipe came along. They are so good and anyone can make them. You wont believe how simple they really are.
For the red velvet cup cake
1 stick of melted butter
3 tbs vegetable oil
2 tsp vanilla extract
1 cup sugar
2 eggs plus 1 egg yolk
1 cup flour
1/4 cup cornstarch
2 1/2 tbs cocoa powder
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp apple cider vinegar
1/2 cup buttermilk
1/2 cup sour cream
1 tbs red food coloring

First melt the stick of butter, put that in a large bowl grab your whisk and whisk in oil and vanilla, next add sugar give it a good whisk, add the eggs and egg yolk one at a time whisking each egg in well. Add flour, cornstarch, cocoa powder, baking soda, baking powder, and salt, whisk it all together, Add the apple cider vinegar and buttermilk and whisk until batter is nice and smooth. Finally fold in the sour cream, and stir in the red food coloring. Line the cupcake tins makes approximately 18 cupcakes, bake at 350 degrees for about 15 to 18 minutes. Let cool and frost.
Cream Cheese frosting
1/2 stick of butter softened
8 oz cream cheese softened
2 tsp vanilla extract
3 cups powdered sugar
Cream together butter, cream cheese, and vanilla. Add the powdered sugar 1 cup at a time and beat until smooth. Frost the cupcakes, I garnished mine with a little crumble from the cupcakes.
