Loaded Baked Mashed Potatoes

If you love potatoes like I do, these will be the perfect addition to your potato recipes. They are cheesy and rich, the bacon adds just a little kick of flavor that you will absolutely love. Potatoes are an absolute necessity in my house, I guess living in Wisconsin that's to be expected. I love trying new recipes with these guys, as there is so much you can do with them. So here is one of my personal favorite dishes.

 

4lbs peeled and cubed russet potato

1 stick of butter

1 8 oz of cream cheese

1 cup heavy cream

1 tsp salt

1/2 tsp pepper

1/2 tsp garlic salt

1/2 tsp garlic powder

1 1/2 cups shredded cheddar cheese

1/4 cup shredded Parmesan

12 pieces of cooked bacon

green onion to garnish

Boil the potatoes until soft, drain and add back into the pot, to the cooked potatoes add butter, cream cheese, heavy cream and seasonings. Mash with a potato masher until creamy and no lumps. Next mix in the parmesan cheese and 1 cup of cheddar cheese. Chop up the bacon and put about half of the bacon in the potatoes. Mix all of it together until combined. Put the potatoes in a 9x13 pan and bake at 350 for 25 min. Take them out add the remaining bacon and cheddar cheese on top and back in the oven for an additional 5 minutes. Take them out and garnish with green onion.
