Blueberry Lemon Yogurt Bread

This recipe has to be one of the easiest bread recipes ever! I know this recipe by heart. You would think something with this much going on with fresh blueberries, fresh lemon, and creamy Greek yogurt, has to be a pain to put together. Well it's not, I whipped it together in about 7 minutes. My house smells delicious the bread is bright and fluffy. This is a most have to add to your favorites recipes.

 

1 1/2 cups flour

2 tsp baking powder

1/4 tsp salt

1 cup sugar

1 cup plain Greek yogurt

4 eggs

2 tsp lemon zest

1/2 tsp vanilla extract

1/2 cup vegetable oil

1 cup fresh blueberries

In a medium mixing bowl combine flour, baking powder, and salt. Set aside. In the mixer cream sugar, yogurt, eggs, zest, and vanilla. Once that batter is mixed together slowly add the flour mixture until its combined. Fold in the oil, and fold in the blueberries. Grease two medium sized bread pans and fill each up half way. Bake at 350 degrees for 45 to 55 minutes until a tooth pick comes out clean.
