Shepard's Pie

Sheppard's Pie is a great comfort food, I like to make this on a rainy or cold day. The house smells so good while it's cooking. It's the kind of meal that just makes you feel all warm and fuzzy inside. Check out this recipe and hopefully you will find yourself making this one soon.

 

2 lbs of beef stew meat, (I use a chuck roast and cube it up)

3 to 4 tbs olive oil

1 onion diced

3 cloves garlic minced

2 tbs flour

3 cups beef stock

one can or bottle of bock beer (you could substitute this with another 2 cups of beef stock)

3 tbs tomato paste

1 tbs worcestershire sauce

1 tsp sugar

1/2 tsp paprika

salt and pepper to taste

This is your base, cube the meat and brown it in a pot. Don't be afraid to give it some dark color. Once that is done set the meat aside. Add the onions and garlic to the pot cook for a couple minutes, add the flour and stir it into the onion and garlic ( this will help thicken the mix) Pour in the beef stock and beer, then add tomato paste, worcestershire sauce, sugar, paprika and salt and pepper. Add the beef, combine and stir and simmer for about 2 hours. This will thicken and the beef will get nice and tender.

Once this mixture is done pour it in a casserole pan or I used a cast iron pan, spread it around. Next top with mashed potatoes, you can make them anyway you would like. I cook my potatoes, mash them well, add 2 sticks of butter and a 8oz cube of cream cheese and salt and pepper and some fresh parsley for color mix until combined.

Stick it in the oven at 375 degrees for about 40 to 45 minutes, and top with a little fresh parsley.
