The Best Banana Bread Ever...

I have been on a bit of a banana kick lately, I've been making everything banana. So this is my favorite bread recipe ever. It's something my mom would make for me growing up she got this recipe from her grandma. You can see its been passed down for 4 generations at least. When I make this I usually double my batch because I like to freeze this bread. That way we can pop it out whenever we want, and honestly it almost tastes better. This recipe is really easy, the secret to making this perfect is folding in the egg whites at the end. Let me explain.

1 cup sugar
1/2 cup white shortening
2 eggs (separated)
3 ripe bananas mashed
8 Tbs milk
2 cups flour
1 tsp baking soda
1 tsp baking powder

First beat the egg whites until you reach still peaks. Set that aside. Next mix all the above ingredients in order including the egg yolks, remember they are separated. Now Fold in the egg whites just until combined. Grease 2 bread pans and fill the pans about half full. Bake at 350 for 45 minutes. Let cool on rack. If you want to freeze the bread, let it cool wrap it in tin foil then put in a freezer zip lock bag.
