Beef Stew

This incredible beef stew will have your mouth watering all day long! I know that's the case in my house. It is the perfect beef stew, very easy to make. Put everything in the crock pot and forget about it.
3 lbs beef chuck roast
1 lb baby potatoes
3 medium carrots
2 packages of fresh button mushrooms
3 stalks of celery
2 cups chicken broth
1 cup beef broth
1/4 cup soy sauce
1/2 cup tomato sauce
1/4 cup flour
3 tbs fresh thyme
3 cloves crushed garlic
salt and pepper
fresh parsley to garnish

Season the chuck roast generously with salt and pepper, brown the meat for color. Take it off and cut it into chunks. In a medium sauce pan combine chicken broth, beef broth, soy sauce, and tomato sauce. Bring to a boil, let it boil a couple minutes. Add the flour whisking it in for another couple minutes. That mixture will be added to the crock pot, you may want to drain it through a strainer to catch some of the smaller chunks of flour if there are any. Adding that to the crock pot along with the chunked meat, carrots, and celery. Add the whole potatoes and mushrooms. Then the garlic, thyme, and more salt and pepper. Cook on high for a good 8 hours meat and vegetables will be tender if you want the juice to be thicker you can 1/2 cup of water mixed with 1/4 cup of cornstarch to thicken. Garnish the top with fresh parsley. Serve just as it is or on some homemade bread with butter.
