Cherry Almond Energy Bites

These cute little energy bites are great to keep on hand for an easy snack, I make a bunch pop them in the fridge and my kids can go in there and grab a couple to snack on. You can switch out the fruit, I personally like dried cherries but this is also great with dried cranberries too.

 

1/2 cup dried cherries (or cranberries)

2 cups of old fashioned oats

1/3 cup honey

1/2 cup peanut butter

1/3 cup milk chocolate chips

1 tsp vanilla extract

1/3 cup chopped almond slivers

 

In a bowl combine dried cherries, oats, chocolate chips, and nuts. Mix together. Add the Peanut butter you can mix it with a fork but your going to want to get in with your hands soon. Add the honey, now is when you really need your hands mix the honey in and the vanilla. make sure everything is combined evenly and roll about 1 inch balls. Put them on a lined with parchment paper cookie sheet and stick in the freezer just long enough for them to freeze about 20 to 30 minutes. Then take them out store in a zip lock bag and put in the refrigerator.
