These warm ooey gooey blueberry muffins with a touch of streusel topping are so mouth watering you'll have to make them. We all love blueberries in my house and picking blueberries is one of our favorite things to do. Every summer we go picking, and I make sure we pick enough to last us at least half the year. I'm freezing them, making jam, and MUFFINS one of our all time favorites!
1 1/2 cups of blueberries
2 eggs
1 tbs baking powder
1 tsp baking soda
2 1/4 cups of flour
1/2 tsp salt
1 cup of sugar
1 tbs of vanilla
6 tbs melted butter
1 cup milk
for the topping
1/4 cup of sugar
1tbs of flour
2 tsp melted butter
1/4 tsp of cinnamon
First make the topping, mix all the ingredients together in a bowl and set aside. Now on to the muffin mixture. In a large bowl combine the dry ingredients, flour, baking powder, baking soda, and salt. Set that aside. In a mixing bowl combine melted butter, sugar, and eggs, cream them together with the mixer until fluffy. Add slowly while mixing milk and vanilla. Once that is all combined whisk in the flour mixture. Last stir in the blueberries.
Spray a muffin pan, and fill the 12 muffin cups. Sprinkle each muffin with the streusel topping. bake at 375 for 15 to 20 minutes, watch for them to get golden brown.
