Game Day Nachos

In honor of the Super Bowl today, here are some game day nachos that will seriously blow your mind. They are honestly the best nacho's I have ever had. They are easy to prepare and take no time at all to whip up something that tastes so delicious everyone will be begging for more, This is a recipe that I always come back to and make it over and over again. Your game day parties will love you for this one!

 

Start out with an onion, green pepper, and a red pepper. Slice them up and put them into a pan add salt and pepper to taste and about 2 tbs of olive oil and 1 tbs of taco seasoning. saute them until they are tender. set the vegetables aside, now time to start the hamburger.

In the same pan brown the hamburger, I like to add salt and pepper, 2 cloves of crushed garlic, 1 chipotle pepper in adobo sauce diced up into small bits, a splash of lime juice, and some chopped cilantro. Just enough to taste, you don't have to go crazy with these ingredients. I play around with the amounts according to how we like it. Make sure to drain any fat from the hamburger. Next is the fun part!

In a pan, it could be 9x13 or I used a round cast iron skillet, put a layer of your favorite tortilla chips, add some of the hamburger, then some of the vegetables, a sprinkle of monetary jack shredded cheese and cheddar shredded cheese. Add another layer of chips pile them on, add remaining hamburger, vegetables and lots of the remaining cheese.

Pop it into the oven at 350 just enough to melt the cheese.

Enjoy the nachos and don't forget your toppings, sour cream, salsa, and cilantro!
