Oatmeal Raisin Cookies

Taking me back many years ago, I wont say exactly how many but when I was a young child. Walking into the kitchen and I smelled a hint of cinnamon I knew what that was baking in the oven, these delicious oatmeal raisin cookies. I could barely wait for them to come out of the oven. My mom made these cookies and only she could make them so good. Now that I'm grown and have kids of my own this is one of my favorites things to bake with my kids and I hope I'm leaving them with the same memory.

 

First start of by measuring out 1 cup of raisins, add to a sauce pan add just enough water to cover the raisins and bring to a boil. once boiling take it off the heat. Now here is

the tricky part we need that raisin juice its what makes these cookies oh so good. Drain the raisins while keeping the juice. Set all that aside.

 

Now you want to sift 2 cups of flour, 1/4 tsp salt, 1 tsp baking soda, and 1/2 tsp of cinnamon in a separate bowl. Then cream together 1 cup sugar, 1 cup shortening until its nice and fluffy. add the 2 eggs and mix in completely and finally 1 tsp of vanilla. Add in the flour mixture slowly until its all combined, add the raisins and 7 tbs of the raisin liquid. last and 2 cups of oatmeal. mix until combined.

 

Drop your cookies onto baking sheets, bake at 350 for 12 minutes. cool on a wire rack and store in a container when cooled. Enjoy these absolutely delicious cookies.
